Hi, Sorry I haven't posted for ages! Here is a recipe for friands!
Serves: 6. Prep time: 15 mins. Cook time: 20 mins.
Ingredients:
115g unsalted butter
30g plain flour
130g icing sugar + extra for dusting
100g ground almonds
3 large egg whites
Grated zest of 1 1/2 unwaxed lemons
100g fresh or frozen raspberries
Method:
1. Heat your oven to 180°C (fan), 200°C, Gas mark 6.
2. Melt the butter and use a little to grease a 6 hole muffin tin.
3. Separately sift the flour and icing sugar into the bowl. Add the almonds and mix.
4. Whisk the egg whites in another bowl to soft peak stage. Then tip the eggs into the flour mix. Add the zest. Pour in the butter and gently fold the whole lot together.
5. When combined, pour into the tins. Then drop a few raspberries on each cake.
6. Bake for 20-25 mins. Cool in the tins for 10 mins, then take out and leave to cool. to serve dust with icing sugar.
