Lemon Drizzle Cake!!!

Hi! I'm back again. This lemon drizzle cake is probably my favourite recipe, here it is!

Preparation time: 20 mins
Cook time: 35 mins
Makes: 8 good slices 

Ingredients:
For the cake:
200g soft butter
200g golden caster sugar 
3 large organic eggs
50g plain or white spelt flour
125g ground almonds
Zest of 2 lemons, finely grated
Juice of 1 lemon
For the icing:
juice of 1 lemon 
5-6 tbs icing sugar

Method:
1. Pre-heat the oven to 180°C (fan) / 200°C / gas mark 6, then grease the tin (20-22cm round tin).
2. Cream together the butter and sugar until light and fluffy.
3. Whisk in the eggs one at a time then slowly add the flour and finally the almonds and lemon zest.
4. Put the mixture in the tin and put it in the oven for about 35-40 mins.
5. To make icing mix a little lemon juice and icing sugar at a time until you get a light paste then pour over the cake.
